I just uploaded some edge testing videos. The progressions are listed in the videos.

  1. Very impressive videos! Particularly the ones with the tomatoes that remain in their place while being cut. Can you tell us which progression(s) you used? You write they are listed in the videos, but I must be overlooking this in a major way.

    1. Hey Mark,
      They were all sharpened on Shapton up to 15k, then stropped with CrO and CBN. The Moritaka cleaver is the only exception. It was sharpened on Japanese naturals: igarashi, Yaganoshima Asagi and Hakka Renge Suita. Stropped on clean hard rolled horse butt afterwards.
